Fuet

 (Spanish fuete, “whip”) – is named for its special shape. In Spain, it is believed that the taste and smell of this long and thin sausage help to improve appetite, so it is often used as a snack before lunch or dinner.

The classic fuet is covered in fine white mold. Gourmets enjoy mold for the delicate mushroom flavor it adds to meat. However, it has other advantages: for example, protection of the sausage from early drying. It is not accepted to clean a white covering from fuet. From this, sausage loses an essential component of the rich taste. In Spain, modern meat gastronomy often makes fuet the basis of brave experiments, complementing its classic taste with unusual flavor notes.
